There is something so spectacularly delicious about guacamole. I mean, its creamy, its spicy, its tart, and its unbelievably fresh. But I think the best thing about guacamole is that it is GOOD FOR YOU! It always makes me so happy to remember this simple fact as I am stuffing myself with guac while eating, well, just about any kind of Mexican food. We thought, however, we would put a spin on typical guac and transform its perfection into something even greater. Whether we succeeded or failed, you be the judge, but after trying this one you might not want to go back to normal guacamole.
Slice and dice your ingredients & toss them in your food processor. Make sure to reserve 1/2 of the pineapple bits for later though- we will want some fresh chunks in the final guacamole.
Lightly process until you have a thick guac consistency, or process longer for a creamy guacamole. Add in the extra pineapple chunks you kept aside and stir in with salt and pepper (it will need plenty of salt).
