A classic side salad that is a delightful summer favorite, this version of a caprese salad is perfect. I am a huge a fan of the presentation of a classic caprese, with its big juicy tomato and big slice of mozzarella, but there is also something particularly refreshing about heirloom tomatoes and how bright, colorful, and full of flavor they are. This recipe combines the aesthetics of a beautiful caprese salad but the extra flavor you get from heirloom tomatoes. Great with most any meal!
Slice heirloom tomatoes into halves and mozzarella into 1cm/1cm cubes. Dice up the basil into small pieces and mix all the ingredients together.
Sprinkle salt, pepper, and Italian seasoning to taste. Stir in some balsamic reduction if you choose (we recommend this!). Garnish with a fresh basil leaf, serve cold & enjoy!
