Avocados are the best. During avocado season a lot of our dishes incorporate avocados and bright flavors. This dressing came to be because 1, dressings are expensive and tend to take up a lot of space in our tiny Manhattan refrigerator, and 2, homemade is always better. A quick and simple way to freshen up a salad, this avocado vinaigrette is great for BBQs, nights on the porch or as a work-lunch salad topper. Using a food processor or blender is required for this recipe. We went with a blender, but both should work.
Place your ingredients in the blender/food processor. Secure the top and let it run until you have the consistency of a light vinaigrette.
Pour your new blend into a dressing jar or preferred container and drizzle away! This dressing goes really well with our Southwestern Quinoa Salad. Enjoy!
