Grain bowls are great because they have such a good balance of grains to greens and you can usually put any protein on them to make them work. This is no exception and is a spicy, flavorful alternative to the normal grain bowls you may be used to.
Make your 1 1/2 cups of rice as dictated by the packaging and set aside. Rough chop your kale and romaine and set aside in a large mixing bowl. Take your diced cucumber, bell pepper, avocado, roasted corn, red onion, fresno pepper, and tomato and mix together in a bowl or dish you can also store it in if there are leftovers. Toss with olive oil and optionally add some oregano, lemon juice, and flaky salt into the mixture.
Measure out each person's servings by placing their greens, rice, and veggies into their dinner bowl. One serving at a time add each person's ingredients back into the large mixing bowl and toss with Harissa Paste, Red Pepper Hummus, and Harissa Dressing. Add in your Falafel or Grilled Chicken Thighs and serve with warmed pita bread on the side. It is much prettier to serve it not mixed, but far more practical to have them pre-mixed as trying to incorporate all the ingredients from within the bowl can be tricky. Enjoy!
