Eating pasta in the summer can be delicious, but it's a time of year when the ragus and bolognese need to take a back seat to fresher options. Chilled pasta recipes can be great in the heat, but this one is a warm pasta that uses seasonal ingredients for some major flavor for summer.

Steam your broccolini until nearly fork-tender and set aside. Bring a pot of water to boil and heavily salt the water and add olive oil. While the water heats, place your tomatoes with some olive oil in the skillet and start to break down the tomatoes over medium-high heat. When they soften and the liquid from the tomatoes has halved, pour in your white wine, and let the wine and tomatoes rapidly simmer. Add your shrimp is and bury them in the sauce and cook on both sides until bright pink - about 2min per side. Once the shrimp are done, add the broccolini back in and add in your noodles once they are finished - toss to coat all ingredients. Finish by adding in your lemon zest into the skillet at the very end before plating.

Summer Shrimp Pasta

Stir the skillet up and use tongs to place each person's portion in their bowl. Finish with cheese & basil and additional chili pepper flakes if you like it spicy. Serve with grilled focaccia & enjoy!
