Preheat your oven to 400 degrees Fahrenheit.
To avoid the "fishy" taste of seafood, we recommend rinsing the halibut under cold running water and patting them dry with paper towels. Next, lather the fish with olive oil (go big). Sprinkle them with salt and pepper and press gently so the pepper sticks to the fish.
Paint your olive oil to your skillet and arrange your sliced tomatoes to line the bottom of your skillet (grill skillet, pan - whatever you've got), and let them grill for 1-2 minutes on high.
Next, arrange the fish, basil leaves and garlic, on top of the grilled tomatoes. Roast until the halibut flakes easily when gently prodded with a fork, 8 to 10 minutes.
Set your oven to broil and broil your halibut skillet for one minute. Take out & serve immediately with a spatula.
