A favorite weeknight meal that helps incorporate the stale bread from last week. We love to not waste food so having a way to convert old bread into something new like homemade croutons makes this a very fun recipe. Also, warm croutons in a salad make a massive difference and make your homemade salads better than at restaurants!
Preheat your oven to 325F. Slice your bread into 1in x 1in squares as best as you can and place them in a mixing bowl. Add in 4oz Olive Oil and all your spices and toss to liberally coat. Lay on a baking sheet in a single layer to maximize crispiness and place in the oven for 15-20min. The croutons are done when they are crispy but not overly browned.
Let the croutons cool just a bit, but while still warm combine all ingredients into a large mixing bowl and toss with cheese, dressing, greens and tomatoes. Serve with Grilled Chicken Breast, Salmon, or grilled skirt steak.
