In a large bowl, combine pork, cabbage, mushrooms, garlic, green onions, hoisin, ginger and sesame oil.
To prep your potstickers, place your wrappers on a plate or cutting board. Spoon 1 tsp - 1.5 tsp of the mixture into the very center of each wrapper. Using your finger, rub the edges of the wrappers with room temperature water. Then, fold the dough over the filling diagonally to create a half-moon or triangle shape. Pinch the edges to seal.
In a medium to large skillet over medium heat, heat your vegetable oil. Once warm, add your potstickers in a single layer, cover and cook until golden and crisp, about 2-3 minutes per side.
Remove and serve immediately with your soy sauce and red chili pepper flakes.
