When we're home and wanting to make desserts, we usually have already made a big entree or had a date night dinner. Let me put this in perspective- we are full, have tons of dirty dishes, and want to spend zero more minutes in the kitchen. Thus, the advent of homemade kettle corn. We are talking 10 minutes at the most and you are left with a lightly sweet, barely salty treat to munch on while reading or finishing up that Netflix show. Cuddle up and enjoy!
Warm your stove to medium and add your olive oil and kernels into a large pot. The kernels will get warm and begin to make a bit of hiss. At this point, add in the sugar and stir vigorously. NOW, COVER THE POT!
Once the kernels begin to pop, take the pot by the handles and shake it (don"t let the lid come off). This will help make sure the majority of the kernels become popcorn. Shaking it off the heat helps to not burn the popcorn and also lets you move the heavier un-popped kernels to the bottom of the pot. Place your pot back on the stove for 1 more minute for any final kernel stragglers. Take off, let cool for 2-3 minutes. Serve and enjoy!
