These vegan apple cinnamon cookies are a fun and healthy way to enjoy a sweet and hearty breakfast. I love making these on the weekend or on a breezy morning. Banana, oats, apple and cinnamon super charge you for the day and keep you full and satisfied for hours . They're also a great way to sneak in some carob/ chocolate into your breakfast. Heat your oven to 350-375 degrees & spray baking tin with non-stick option,
Go bananas. Bananas are one of those foods to always have on hand. I love them and probably eat 1 or two a day. I also use them in Warm Carob Morning Muffin and Vegan Blueberry Morning Muffins. Start with your banana, peeled, broken in half and placed in a bowl.
For this recipe I use mini Fuji apples we buy in bulk for the week, but any apple will do. Slice the sides off the apple so all that is left is the core. Dice the two thick sides into little bits (about the size of confetti or rice grains). The extra thin slices will be used to top your cookies as half moon slices. Put the bits into your bowl with the banana.
Add in your quick oats, flax seeds, coconut shreds, and chia seeds. Using a spoon mash all of your ingredients together until you have a thick cookie-dough-like consistency (it might take a little while, but you’ll get there). You might need to add a little vanilla extract to ease the process. Once this is done sprinkle in your cinnamon.
Cover a baking sheet in tin foil and coat with a non-stick element (I just use olive oil). Spoon your cookie mix into little cookies and lightly flatten them (see picture above). Place your half moon apple slices on top of your cookie “patties†and place them in the oven for 30-35 minutes. Once they are browning on the bottom they’re ready to be taken out and enjoyed!
