A light and refreshing summer classic, these bellinis are easy to make and very fresh. I am not trying to say they are HEALTHY because they have a peach in them... but isn't that better than no peach? Enjoy these bellinis with brunch or by themselves, but no matter when you choose to have them you will definitely be delighted.
Slice your over ripe peach into 1/1 cm blocks and place in a bowl. Use a spoon to mash the peach until the juice runs free and a sort of "peach muddle" forms. You can also just blend it into a puree & strain out the juice.
Using a strainer, strain the liquid out of the muddle so that the pulpiness of the peach stays behind. Pour the liquid into your Champagne flutes & fill the remainder with Champagne. If you are adding the peach schnapps, add that in before you pour the champagne and after you add the peach juice.
