This cocktail is perfect for an asian-fusion cooking night. We originally made this drink when we were on an asian-fusion kick and were making lots of homemade sushi, potstickers and ahi bites. It's a perfectly balanced and light drink. You can mix it to be on the drier side or sweeter side depending on what your preference is by switching out the type of sake you add in and if you go with fresh lychee vs. canned or syrup.

If using fresh lychee, peel and de-pit your fruit, blend and strain into your measuring container.

In your mixing glass with ice, stir all of your ingredients together. Strain into your chilled glass. Serve immediately. Garnish with a fresh lychee or lychee peel.
