After a long night of cooking I was tired. I woke up tired, and I woke up hungry. I was proud of myself for somehow imparting enough self control into the evening to not eat the entire 2lbs of short ribs and then lick the crockpot clean for good measure. Yay me - little victories.
With my self control winning out, or more likely Christina just taking the food away from me, I had about a pound of leftover short ribs from last night's delicious cooking rampage. World Cup 2018 was 20 minutes away, I had a mountain of dishes to do from last night, and after 8 hours of cooking and taking photos last night I decided - "Yeah, why not, let's make some huevos rancheros."
Yet again, another staple I order from restaurants. It’s one of those things that just tastes better served TO you rather than making yourself but after this morning I think I changed my mind. This simple recipe is so easy to make, takes no time at all, and as long as you have the ingredients on hand it almost feels like left-over scraps made into a delicious breakfast.
If you don't have the short ribs don't sweat it, still a fantastic breakfast and one you can make any day of the week for a great start to the day.
If you have a grill, fire it up or place the oven on broil if you don't. We are just firing the corn tortillas, so if you want to go lo-fi, you can pan sear them. Warm up your black beans in small sauce pan and if you are using the braised short ribs, warm those up in the same pan as the black beans. Add some salt and stir to keep warm on medium to low heat.
In a small skillet, warm up olive oil on medium high heat and get a lid ready that fits the pan. Once fragrant, crack the eggs into the skillet and cover up. Wait for about 2 minutes and then remove the lid to ensure the top of the eggs are just slightly white or that all the albumen has hardened into beautiful cooked egg white and that the edges of the eggs are a light golden brown.
Place your warm fired tortillas onto a plate and top with your warm shredded beef and black bean mix. Place the eggs directly on top of the mix and finish with salsa. Avocado is optional (no it's not, you know that - add avo). Finish with cracked pepper and salt to taste.
