So I am not a huge fan of pancakes cause they are just too heavy. If I eat pancakes in the morning I still know I ate pancakes about three days later. Nathan suggested I make "Christina Pancakes" that were healthier and lighter, so these were born. Lots of people make pancakes like this, but I added a little cinnamon and vanilla extract to make sure that banana flavor wasn't too overpowering. These give you a nice thin pancake that is just as good as the original with none of the bad stuff that leaves you feeling so full. Try them and let me know what you think!
Put all the ingredients into a blender and blend until consistent and smooth. You can also whisk them together if a blender is not an option. In a lightly greased pan on low to medium heat, pour out small 2-3 inch pancakes and drop a few blueberries on them once they start to cook. Wait 1-2 minutes until they firm up and then flip them. Cook to taste. You can do 2-3 at a time or if you have a large flat range you can make them all at once, either way add a little syrup or agave nectar and you are set!
