Nathan and I love our breakfasts on the weekends, and we are always trying to make something new. His favorite is to make breakfast sandwiches with bagels while I usually go for avocado toast and an egg. This last weekend though, Nathan wanted to make pizzas for dinner and we had a small flatbread leftover. We also happened to be out of toast so it was destined to become my day for breakfast pizza. This is really just an advanced version of an avocado toast but boy oh boy is it tasty.
Set a skillet to medium heat and sauté your spinach and turkey together with salt and pepper and olive oil. When the spinach are gently wilted, crack your eggs in with them and scramble it all together. Toast your flatbread on broil for about 1 minute on each side to get it crispy.
When the bread is as crispy as you like, smear on the avocado as a sort of "sauce" for the breakfast pizza and then top with your scrambled egg mix. Enjoy!
