Prepare to be the talk of the potluck! These quick-to-make turkey lettuce wraps are the perfect appetizer. They fit those key appetizer categories that make you ready for your entree -- light, spicy and crunchy. Nathan and I loved these so much when we first tested the recipe, we ate it three weekends in a row, not kidding. The best part is that they're pretty healthy so you don't have to feel guilty after eating the whole batch yourselves. These Spicy Lettuce Wraps also go very nicely with warm Sake (great for these cold New York winter months).
Turn your burner to medium-high heat. In a large pan, warm the olive oil and sesame oil.
Add the green onions, ginger, garlic and red pepper flakes and cook, stirring until fragrant but not browned (about 2 minutes).
Add in your turkey to the pan. Break it into pieces, mix and continue cooking until the turkey is no longer pink (about 5 minutes). Add your soy sauce and cook for 1 more minute.
To serve, spoon about 1/4 cup of the turkey mixture into the center of your lettuce leaf and wrap the lettuce leaf-edges around the filling. Drizzle with 1/2 tsp. sauce, or to taste. Serve with Sake!
