Inspired by our 1 year wedding anniversary trip to the Caribbean, these Shrimp Avocado Toasts bring the fresh, spicy and unique flavors of the tropics to your home. Upon arrival we visited a charming beach-side restaurant with my grandparents and ordered something similar off of the menu. We were blown away! (Maybe it was the travel hunger, or maybe they are just that delicious- you decide). These toasts mix bright lime, cilantro, serrano pepper, garlic, and shrimp with smooth avocado and finish with a delicious whole grain toast crunch. Talk about healthy and crazy tasty. We have enjoyed making these bites ever since out trip! Travel is the best way to experience new foods and try new things.
Start by mincing your garlic, cilantro and serrano pepper. Place your minced ingredients into a bowl.
Chop your shrimp into thirds and set aside. (You do not want to add them to your minced ingredients just yet).
Place your bread on a baking sheet and set your oven on broil. Once at heat, put your bread in the oven for 2-3 minutes until it toasts to a crispy brown. (Disclaimer, this recipe tastes best when using San Francisco Style sourdough bread)
Using a muddler smash your avocado in with your minced ingredients and mix until everything is fully incorporated. Add in your chopped shrimp, lime juice and, salt and pepper to taste. Mix.
One side of your toasts will be more crispy than the other (at least that is our 1950s style oven does it). Facing the toaster side down, top your toasts with the Shrimp Avocado mash. Slice them into mini pieces.
Serve with a dry white wine, our recommendation is a dry Riesling.
