Another win for the slow cooker. Slow cookers, as I'm sure we've said before, are one of the best culinary purchases anyone can make. They're incredibly useful in that they cook your food (while you're out working, running errands, doing life), then you come home and BAM your food is ready! How great is that. They're also very easy to clean and "new-to-cooking-friendly". Anyway, we love ours. These Shredded Beef Quesadillas were the happy by-product of our slow cooker leftovers, and they were delicious.
Take your pre-made shredded beef and put it into a skillet with jalapeno and salsa on medium heat.
Let it simmer and allow the jalapenos to break down. Mix occasionally for 3 minutes. Then remove it from your skillet.
Take your tortilla and place it into your skillet on medium heat and let the tortilla become crispy, about 2 minutes. Add 1/2 of your cheese and allow it to melt, about 2 minutes.
Add 1/2 of your shredded beef to your melted cheesey tortilla. Top it with your second tortilla, and flip. Let it get crispy for about 1 minute. Then remove your quesadilla and repeat for the second round.
Stack'um up and dip them in some delicious Homemade Pico or Pineapple Guacamole.
